trying new things

First off this week has been crazy!!!!!!!!!!!!!!! I should of knew with the head ache I had all week. So on Monday and Tuesaday this week I sub. taught and let me tell you I got in a lot of my steps that way, by the end of my day I had over 10000 each day. But sad news guess what broke my pedometer,:( I am very sad. I mean I did steal it from my mom, but still it is broken. so now I have to break down and get a new one. Maybe a GRUVE????? So also this week I have been doing wii fit every day. My son Logan loves it! Now all I can say is that wii fit is much harder when you have you 24 pound son on your hip! Then to top it off I we got hit witha snow/ice storm and my new exter earth shoes are stuck and will not be here till weds. But all in all I have learned a lot this week. Heres the run down:
1. Always trust yourself, and remember that you can do anything you set your mind too!
2. Never give in to your enter voice that tells you can't do anything!
3. Be willing to try new things!
Now those are a few things I have learned in the past few weeks being in the mamavation sisterhood.

Next I want to talk about something i am really passionat about and that is food! Ok I am sure most of you reading this are thinking Amanda this is about loseing weight. Well Most of you do not know, but I went to college for Culnairy Arts. Because of that I have been really looking at the food I have been eatting and cooking. So now in each post I am going put recipes each week ones that have made that are low in fat, calories, and carbs. So if you like please try! Enjoy and I hope the best for each of you! 

Orange-Ginger Chicken with Almonds
The thing I loved the best about this was that I could make it in the microwave useing the ziploc steam bags!

2 boneless, skinless chicken breasts, cut into 1-inch cubes

1 medium carrot, sliced into 1/4-inch pieces
1/4 cup orange marmalade
1 tsp vinegar
1 tsp cornstarch
1 tsp ground coriander
1/2 tsp ground ginger
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp black pepper
2 medium scallions, sliced
2 Tbsp medium sliced almonds
 
  Combine all ingredients, except scallions and almonds, in a medium or large Ziploc® Zip‘n Steam® bag. Seal bag and shake gently to distribute seasonin
Place bag in microwave. Cook on full power until chicken is cooked through, with no trace of pink, about 4 to 6 minutes. If needed, continue microwaving at 30-second intervals or more until chicken is done.
Allow bag to stand 1 minute before handling. Carefully open bag and pour out contents into a serving dish. Garnish with scallions and almonds.



Amanda Barbebue Chicken Salad

Ingredients


2 skinless, boneless chicken breast halves

1 head red leaf lettuce, rinsed and torn

1 head green leaf lettuce, rinsed and torn

1 fresh tomato, chopped

1 bunch cilantro, chopped

1 (15.25 ounce) can whole kernel corn, drained

1 (15 ounce) can black beans, drained

1 (2.8 ounce) can French fried onions

1/2 cup Ranch dressing

1/2 cup barbeque sauce

Directions

1.Preheat the grill for high heat.

2.Lightly oil the grill grate. Place chicken on the grill, and cook 6 minutes per side, or until juices run clear. Remove from heat, cool, and slice.

3.In a large bowl, mix the red leaf lettuce, green leaf lettuce, tomato, cilantro, corn, and black beans. Top with the grilled chicken slices and French fried onions.

4.In a small bowl, mix the Ranch dressing and barbeque sauce. Serve on the side as a dipping sauce, or toss with the salad to coat.

I have to remember 2. Never give in to your inner voice, am bad for listening to it way too often. But if you can do 1. then I believe I can stop listening to my iv. Love the recipe, it sounds so yummo! Keep up the great work, you can do it!

Great job on the step counts! I bought a cheap pedometer last year and, well, it was cheap and broke within a few months. I still haven't replaced it :-(

Yes please talk about food all you want. I have been wanting an orange chx recipe. This is also the first week I will attempt a chicken salad (my hubby requested it out of nowhere).
Next up, my condolences for your pedometer, I guess you walked it into the ground :(

Drooling over the Orange-Ginger Chicken with Almonds recipe already, lol! Don't you love the Wii especially when the kids join you for workouts? I love mine so much! Does Gruve track your step counts as well? That would be awesome! Let me know how you like it if you decide to buy one. Great job on getting in over 10K per day. How'd you do it?
