trying new things

First off this week has been crazy!!!!!!!!!!!!!!! I should of knew with the head ache I had all week. So on Monday and Tuesaday this week I sub. taught and let me tell you I got in a lot of my steps that way, by the end of my day I had over 10000 each day. But sad news guess what broke my pedometer,:( I am very sad. I mean I did steal it from my mom, but still it is broken. so now I have to break down and get a new one. Maybe a GRUVE????? So also this week I have been doing wii fit every day. My son Logan loves it! Now all I can say is that wii fit is much harder when you have you 24 pound son on your hip! Then to top it off I we got hit witha snow/ice storm and my new exter earth shoes are stuck and will not be here till weds. But all in all I have learned a lot this week. Heres the run down:
1. Always trust yourself, and remember that you can do anything you set your mind too!
2. Never give in to your enter voice that tells you can't do anything!
3. Be willing to try new things!
Now those are a few things I have learned in the past few weeks being in the mamavation sisterhood.

Next I want to talk about something i am really passionat about and that is food! Ok I am sure most of you reading this are thinking Amanda this is about loseing weight. Well Most of you do not know, but I went to college for Culnairy Arts. Because of that I have been really looking at the food I have been eatting and cooking. So now in each post I am going put recipes each week ones that have made that are low in fat, calories, and carbs. So if you like please try! Enjoy and I hope the best for each of you! 

Orange-Ginger Chicken with Almonds
The thing I loved the best about this was that I could make it in the microwave useing the ziploc steam bags!

2 boneless, skinless chicken breasts, cut into 1-inch cubes

1 medium carrot, sliced into 1/4-inch pieces
1/4 cup orange marmalade
1 tsp vinegar
1 tsp cornstarch
1 tsp ground coriander
1/2 tsp ground ginger
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp black pepper
2 medium scallions, sliced
2 Tbsp medium sliced almonds
  Combine all ingredients, except scallions and almonds, in a medium or large Ziploc® Zip‘n Steam® bag. Seal bag and shake gently to distribute seasonin
Place bag in microwave. Cook on full power until chicken is cooked through, with no trace of pink, about 4 to 6 minutes. If needed, continue microwaving at 30-second intervals or more until chicken is done.
Allow bag to stand 1 minute before handling. Carefully open bag and pour out contents into a serving dish. Garnish with scallions and almonds.

Amanda Barbebue Chicken Salad


2 skinless, boneless chicken breast halves

1 head red leaf lettuce, rinsed and torn

1 head green leaf lettuce, rinsed and torn

1 fresh tomato, chopped

1 bunch cilantro, chopped

1 (15.25 ounce) can whole kernel corn, drained

1 (15 ounce) can black beans, drained

1 (2.8 ounce) can French fried onions

1/2 cup Ranch dressing

1/2 cup barbeque sauce


1.Preheat the grill for high heat.

2.Lightly oil the grill grate. Place chicken on the grill, and cook 6 minutes per side, or until juices run clear. Remove from heat, cool, and slice.

3.In a large bowl, mix the red leaf lettuce, green leaf lettuce, tomato, cilantro, corn, and black beans. Top with the grilled chicken slices and French fried onions.

4.In a small bowl, mix the Ranch dressing and barbeque sauce. Serve on the side as a dipping sauce, or toss with the salad to coat.

food yummy yummy yummy............

ok so as you can see this post is going to be about none other then food! I have been trying so hard to change my look food and how food is really honestly changeing my life! Now like everyone else I know and have talked to I looked a lot different on my wedding day then I do now. I have been looking at those pictures a lot, and thinking what did I do different back then. Well first off I was so excited to look good for my wedding day that I was eatting right and back heathy choices. My day would look like for breakfast I would have a protin shake, or two eggs with cheese a slice of bacon and a glass of milk. Then I would walk or ride my bike to work or school. Next for Lunch I would have a salad with grilled chicken or spanich salad with lemon poppy seed dressing. I would came home from work. Walk or run the trail b y my house for 30 to 45 mins. then for dinner have chicken or fish. every day was the same.

Now I look at myself and see that it is not like that anymore. I get up and I have to make myself eat, then by lunch time I am so hungry I am not sure at what to eat, so I eat what I see! I walk when handly hardly anymore at all, and at dinner making something for dinner that is healthy is hard.
But after two and a half weeks with Mamavation and now doing Pete Cohen 28 program I am doing so much better! My last two days have been so much better! I am not saying by any way that I am back to my old self, but I am getting there, now when I wake up I make sure I eat, and I am exersing everyday! I cook a dinner every night is not only a dinner for me, but a healthy dinner for my family! I am doing wii fitt every day and well I have lost five and a half pounds!!!!!!!!!!!!!!! I know that without Leah and all you other Mamavation sister I would never be able to do this. So thank you!

1/4 cup white wine vinegar

4 teaspoons sugar

2/3 teaspoon dry mustard

2/3 teaspoon salt, adjust to taste

2 teaspoons lemon juice

2/3 cup olive oil

1 tablespoon poppy seed


1 lb spinach and 1 lb of roman hearts(lettuce)

1 (11 ounce) can mandarin oranges, drained

1/4 lb bacon, crisply cooked and crumbled

1 medium avocado, sliced

1/4 medium red onion, cut into rings or 3 green onions

1:Dressing: Combine all ingredients and whisk to emulsify.

2:Salad: Combine all ingredients, drizzle with dressing, toss and serve immediately.

Now there is so many other things that you can add to your salad or take away! Also I love adding grill chicken on it so yummy!

My new found energy! Mamamvation

Hello everyone out there, I am hoping this has been a great week for everyone. Things here has been wonderful! I as most of you know applied to be one of the next mamavation moms, I was not chosen to be one of the top five, but after the tears I found something In my house that keeped me going. It was Logan! He came to me and said in little voice mama and placed his little hands on my face and kissed me! At that moment insteed of quiting I knew I needed to press on and get heathy for him. So here I am and that is what I am going to do! I have been walking with him which he loves as much as I! I am making new found friends online and if I havn't met you yet I am @beeacutie2 and I would love to be a friend of yours! I am founding new recipies which are great and low in fat, and mre then anything I am not giving up I am working this out and I will keep it up and will get myself heathy for my son Logan!

Mamavation moms!

Hello everyone,

Well this is going to be a personal blog to all you out there. I have been thinking of doing this for a while, but has been scared to do it. Well I have thought I need to get over my scaredness and just do it. So here I am putting myself out there on the line for all to see. I am putting my applaction in to be the next Mamavation mom, but I am going to need all your help and support. Mamavation is a wonderful program that gives moms the steps the need to start making heathy choices now in their life, its not a diet it is a whole fitness program to teach you how to become the person you know you can be.
